Preheat Non stick skillet or griddle pan to medium high heat or until drops of water sizzle on surface. Optional: Spray cooking surface well with no cal/low cal cooking spray (We like Smart Balance® Spray)
Scoop batter from mixing bowl using ¼ cup measuring cup and pour on to cooking surface. Add 3-5 blueberries to batter side of pancake. Cook until small bubbles form on tops & edges of pancakes (about 5 minutes). Turn pancakes over and cook other side until golden brown.
Serve immediately. Yields approx 1dozen, 2oz, 100 calorie pancakes.
